Brown rice salad

About the Recipe

Ingredients

  • 1/2 cup sultanas

  • 1 cup cooked brown rice

  • 1 clove garlic

  • 1 Tbsp crushed ginger

  • 1/2 onion

  • ½ capsicum

  • 2 handfuls spinach

  • 1 cup peas

  • 2 grated carrots

  • 1 Tbsp oil

  • 1 Tbsp peanut butter

  • 4 Tbsp warm water

  • 1/3 cup peanuts- roasted

  • 2 Tbsp honey

  • 1 Tbsp sesame oil

  • Pinch salt

  • 1 Tbsp soy sauce

  • 2 spring onions

  • Sesame seeds 1⁄4 cup

Preparation

Step 1


Dry-fry peanuts in pan until golden. Remove from pan and transfer to paper towel or plate.



Step 2


In a pan sauté garlic, ginger, onion, capsicum and oil until soft.



Step 3


In a cup, mix the peanut butter with water until a smooth paste forms



Step 4


Add the sultanas, peanut butter paste, and all other ingredients (except for spring onions and sesame seeds) and stir for 5 mins until cooked through.


Step 5


Garnish with spring onions and sesame seeds.
