Ingredients:

  • 2 cups of raw almonds

  • 20 pitted dates

  • 1/3 cup of dried cranberries (optional)

  • 1/3 cup of desiccated coconut

  • 2 oranges

  • 1 Tablespoon of cinnamon

  • 1 Tablespoon of cocoa powder

  • 1 Tablespoon of vanilla essence

  • For the outside coating:

  • 1/3 cup of desiccated coconut

Method:

  1. Place the almonds, dates, cranberries, coconut, cinnamon, cocoa powder, and vanilla in a blender or food processor and blend until the almonds are fine.

  2. Grate both oranges, getting as much zest as you can, and place this into the blender along with the juice of both oranges. Blend until all the ingredients are combined.

  3. Roll the mixture into small balls, this should make around 13-16.

  4. Place the rest of the desiccated coconut into a shallow cup and roll each ball individually into the coconut, making sure the coconut is evenly covered on each bliss ball.

  5. Place the bliss balls in the fridge for at least an hour before serving.
