The perfect morning or afternoon tea snack! Packed with oats, nut butter, and seeds, this recipe provides you with a tasty sweet treat that can be made in advance, cut, and stored in the freezer for a quick grab and go. Even better- you don't have to bake them!
Ingredients:
1 cup peanut butter
1/4 cup honey
1 tsp vanilla extract
3 Tbsp chia seeds mixed with 6 Tbsp water
2.5 cups rolled oats
1/3 cup extras (flaxseed, chopped almonds, pumpkin seeds, sunflower seeds)
Sprinkle of chocolate chips (optional)
Method:
In a large bowl, combine the peanut butter, honey, vanilla extract, and chia seeds. Mix until smooth and well-blended. Add the rolled oats and "extras" to the peanut butter mixture. Stir until all the ingredients are evenly combined.
Line an 8×8 inch baking tray with baking paper.
Transfer the mixture to the prepared baking tray. Press down firmly to flatten the mixture evenly. Sprinkle with your chocolate chips here if you would like to and press them flat into the mixture as well.
Refrigerate or freeze the granola bars for 1-2 hours to allow them to set.
Once set, remove from the fridge and use the excess parchment paper to lift the granola bars out of the dish. Cut into bars or squares of your desired size.
