Ingredients
Base
1/2 cup cashews (soaked & drained)
1 cup dates (soaked & drained)
2 cup oats
1 cup desiccated coconut
a pinch of salt
Caramel
â…“ cup cashews
2 cup dates (soaked, drained)
2 Tbsp pure maple syrup
2 Tbsp hulled tahini
2 Tbsp coconut oil, melted
Chocolate
3/4 cup coconut oil- melt in microwave
½ cup cocoa
4 Tbsp pure maple syrup
1 tsp vanilla essence
Preparation
Base
With a stick blender or a food processor, blend the base ingredients until finely ground.
Press mixture into 20x30cm lined tin.
Caramel
In a food processor, blend the ingredients to make the caramel filling.
Add additional water until smooth.
Spread over base with spatula.
Chocolate
For the chocolate layer, combine all ingredients in a pot.
Stir until melted and combined then spread evenly over caramel layer.
Place in the freezer for 2 hours.
