Chocolate Caramel Slice

About the Recipe

Ingredients

Base

  • 1/2 cup cashews (soaked & drained)

  • 1 cup dates (soaked & drained)

  • 2 cup oats

  • 1 cup desiccated coconut

  • a pinch of salt


Caramel

  • ⅓ cup cashews

  • 2 cup dates (soaked, drained)

  • 2 Tbsp pure maple syrup

  • 2 Tbsp hulled tahini

  • 2 Tbsp coconut oil, melted


Chocolate

  • 3/4 cup coconut oil- melt in microwave

  • ½ cup cocoa

  • 4 Tbsp pure maple syrup

  • 1 tsp vanilla essence

Preparation

Base


  1. With a stick blender or a food processor, blend the base ingredients until finely ground.

  2. Press mixture into 20x30cm lined tin.


Caramel


  1. In a food processor, blend the ingredients to make the caramel filling.

  2. Add additional water until smooth.

  3. Spread over base with spatula.


Chocolate


  1. For the chocolate layer, combine all ingredients in a pot.

  2. Stir until melted and combined then spread evenly over caramel layer.


Place in the freezer for 2 hours.
