Ingredients
Base:
1 cup almonds soaked overnight rinsed and drained
1 cup oats
2 Tbsp coconut oil (melted)
1 c desiccated coconut
2 c dried apricots (soaked and drained)
1/2 lemon juice, flesh & zest
1/8 tsp salt
Icing:
1 c raw cashews soaked 1-2 hours
4 tbsp honey
4 Tbsp coconut oil melted
Juice of 1 lemon
Preparation
Step 1
Blend base ingredients in your food processor until a sticky cookie dough type texture forms, then press mixture into a lined baking tray and put in the freezer.
Step 2
Blend topping ingredients until super creamy.
Step 3
Sprinkle with coconut, and put into freezer.
