Lemony apricot fudge

About the Recipe

Ingredients

Base:

  • 1 cup almonds soaked overnight rinsed and drained

  • 1 cup oats

  • 2 Tbsp coconut oil (melted)

  • 1 c desiccated coconut

  • 2 c dried apricots (soaked and drained)

  • 1/2 lemon juice, flesh & zest

  • 1/8 tsp salt

Icing:

  • 1 c raw cashews soaked 1-2 hours

  • 4 tbsp honey

  • 4 Tbsp coconut oil melted

  • Juice of 1 lemon



Preparation

Step 1


Blend base ingredients in your food processor until a sticky cookie dough type texture forms, then press mixture into a lined baking tray and put in the freezer.



Step 2


Blend topping ingredients until super creamy.



Step 3


Sprinkle with coconut, and put into freezer.
