Basil & Sundried Tomato pesto
About the Recipe

Ingredients
1 cup basil leaves
3x sundried tomatoes
1/2 cup pumpkin seeds
3 Tbsp olive oil
Juice of 1 lemon (add zest, too, for more lemon flavour)
1 clove garlic, roughly chopped
1/2 tsp salt
1/4 tsp pepper
Preparation
Step 1
Combine all ingredients in a bowl and blend with stick blender until very smooth and well mixed.
Step 2
Taste and season adding additional lemon juice, salt, or pepper to taste.
