Red Capsicum Hummus
About the Recipe
Ingredients
1x can chickpeas, rinsed and drained
2 garlic cloves
juice of one lemon
1 tablespoon tahini
1 teaspoon ground cumin
1 large red capsicum
1/3 cup olive oil
salt and pepper to taste
extra virgin olive oil to drizzle
Preparation
Step 1
Place all ingredients (excluding olive oil and salt and pepper) into a bowl and blend with stick blender.
Step 2
Drizzle with extra olive oil. Sprinkle with black pepper and serve.
Note: roast the capsicum beforehand to make a roasted capsicum version of this.
