Asian peanut stir fry

About the Recipe

Ingredients

  • 3 cups cooked brown rice

  • 4 cloves garlic

  • 2 Tbsp ginger puree

  • 1 onion

  • 1 capsicum- red

  • 2 Tbsp oil

  • 2 Tbsp peanut butter

  • 4 Tbsp warm water

  • 1 cup peanuts- roasted

  • 2 Tbsp honey

  • 1 Tbsp sesame oil

  • Pinch salt

  • 2 Tbsp soy sauce

  • 2 spring onions

  • Sesame seeds ¼ cup

Preparation

Step 1


Dry-fry peanuts in pan until golden. Remove from pan and transfer to paper towel or plate.


Step 2


In a pan sauté’ garlic, ginger, onion, capsicum and oil until soft.



Step 3


In a cup, mix the peanut butter with water until a smooth paste forms



Step 4


Add the peanut butter paste, and all other ingredients (except for spring onions and sesame seeds) and stir for 5 mins until cooked through.



Step 5


Garnish with spring onions and sesame seeds.
