Beetroot tarts

About the Recipe


  • 4 x beetroot (roasted and sliced)

  • ·2 sheets puff pastry

  • 1 block feta

  • 1 ½ teaspoons finely chopped thyme

  • 2 teaspoons honey (microwave if hard)

  • 1 tablespoon olive oil

Optional: Add a sprinkle of walnuts before placing in the oven.


Step 1

Lay pastry sheets flat on the oven tray. Cut into small squares to make one large tart.

Step 2

Arrange slices of beetroot around the pastry, slightly overlapping.

Step 3

Mix thyme, honey and olive oil together and brush over beetroot. Top with chunks of feta cheese.

Step 4

Bake for 15-20 minutes or until pastry is puffed and golden.
