About the Recipe
Ingredients
4 medium-large potatoes- roasted or microwave-baked
½ red onion
2 clove garlic
½ capsicum
1 can of black beans
1 cup spinach
2 tsp red curry paste mixed with splash of hot water
2 Tbsp honey
Salt and pepper
1/2 cup milk
1/2 cup of grated cheese
Preparation
Step 1
Cut potatoes in half length-ways and scoop flesh into a bowl.
Step 2
In a frying pan- finely dice and sauté oil, onion, garlic, and capsicum.
Step 3
Add curry paste, spinach, and black beans to pan.
Step 4
Remove from heat.
Step 5
Add milk and potato flesh and mix together.
Step 6
Spoon potato mix back into the shells pressing firmly down and heaping them up.
Step 7
Sprinkle cheese on top.
Step 8
Place on oven tray and bake for ~10mins.
