Ingredients
Chicken 600g
Lentils or chickpeas x 1
Onion
1 Tbsp each of garam masala, cumin, paprika
1 tsp each of coriander and tumeric
¼ tsp chilli
2 cloves garlic
2 tsp fresh ginger
½ lemon- zest
1 tsp salt
2 cups grated pumpkin
1 grated carrot
1 tin crushed tomatoes
2 -3 Tbsp tomato paste

Plain yoghurt- to serve
Preparation
Step 1
Cut chicken into small cubes.
Step 2
In a bowl, add onion, spices, garlic, ginger, lemon zest and salt to chicken.
Step 3
In a fry pan, add chicken mixture and cook for about 10-12 minutes or until starting to brown.
Step 4
Stir in grated pumpkin, carrot, tomatoes, tomato paste and cream. Simmer for 5-10 minutes. Season to taste with salt and pepper.
Step 5
Remove from heat and stir through yoghurt.
Step 6
Garnish with more yoghurt.
