Ingredients
1 red apple
1 green apple
2 medium carrots (grated)
1/2 cup plain yogurt
½ lemon- juice only
2 tablespoons honey
2 teaspoons rice wine vinegar
Salt & ground black pepper
½ block crumbled feta cheese
1/2 cup raisins
Preparation
Step 1
Core apples and grate them into a large bowl and toss with lemon juice. Add grated carrots and stir to combine.
Step 2
In a small bowl, whisk together yogurt, honey, rice wine vinegar, and salt and pepper, to taste.
Step 3
Pour over apple/carrot mixture and stir to coat.
Step 4
Mix in crumbled feta cheese
Step 5
Taste and adjust seasonings, adding more salt and pepper, if necessary.
