Cauliflower risotto

About the Recipe


  • 1 onion- diced

  • ¼ large head of cauliflower

  • 1 cup vegetable stock

  • ½ cup cheese

  • Salt and pepper


Step 1

Add a dash of oil to a hot pan and sauté onions until soft.

Step 2

In a food processor, whiz the cauliflower (heads and stalks) until it resembles cous- cous.

Step 3

Add all ingredients to the pan and simmer on a low heat for ~20 minutes.
