About the Recipe
Ingredients
1 brown onion (diced)
2 handfuls mushrooms
2 cloves garlic (finely chopped)
1 Tbsp oil
500-600g chicken thighs
1/3 cup sundried tomatoes
½ cup milk
1 tsp salt
1 tsp rosemary or thyme
250g beans
½ bag spinach
Zest and juice of 1 lemon
250g tub sour cream
Preparation
Step 1
Heat the oil in a large frying pan and add onions, mushrooms, garlic, and chicken.
Step 2
Add tomatoes, milk, salt, and herbs, and leave to simmer on a low heat.
Step 3
Cook for ~15 minutes, until the chicken is cooked through.
Step 4
Add beans, green leafy veg, and lemon. Stir through for 2-3 mins then remove pan from heat.
Step 5
Fold sour cream through and season wit salt and pepper.
