Grilled chicken Halloumi salad

About the Recipe


  • 2 medium oranges, segments and juice

  • 1 small bunch mint, leaves chopped

  • 2 tsp red wine vinegar

  • 1.5 tbsp olive oil

  • 250g pack halloumi cheese, drained (we are also using paneer)

  • ¼ cup walnut pieces

  • 2 handfuls spinach


Step 1

In a large bowl, combine the orange segments and juice, mint leaves, vinegar and olive oil. Season, then gently toss together.

Step 2

Slice each block of halloumi into 8-10 pieces, then fry for 1-2 mins on each side on fry pan.

Step 3

Add walnuts and salad leaves to the orange and mint, then toss together. Top with the griddled halloumi slices and season with some black pepper.

*Low carb, vegetarian, lunchbox idea- boost the protein by adding shredded chicken, tinned salmon, or lentils.
