Mexican “anything” summer salad

About the Recipe

Ingredients

  • ½ tomato- diced

  • ½- 1 capsicum- diced

  • 1 handful spinach - chopped roughly

  • ½ tin whole corn- drained

  • ½ tin black beans- drained and rinsed

  • ¼ large red onion- finely diced

  • Sprinkle feta- optional

  • Garnish: Parsley (optional)


Honey & lime dressing


  • 1/8 cup lime juice

  • 1/8 cup olive oil

  • 2 tbsp honey

  • 1 tsp dried cilantro

  • 1 garlic clove, peeled and minced


Preparation

Step 1


Combine all salad ingredients in a bowl.




Step 2


Mix together all the dressing ingredients and pour over the Mexican salad- then toss through until evenly coated.
