Mexican black bean salad

About the Recipe

Ingredients

  • 1 tin black beans- drained and rinsed

  • 1 tomato- finely chopped

  • ½ cucumber - diced

  • ½ red onion- finely diced

  • ½ cup cooked corn

  • ½ green pepper- finely chopped

  • Feta to sprinkle- optional

Lime dressing:


  • 3 Tbsp lime juice

  • ¼ cup olive oil 85

  • 3 Tbsp red wine vinegar

  • ¼ tsp chilli powder

  • ½ tsp ground cumin

  • ½ tsp salt- to taste

Preparation

Step 1


In a bowl- combine chopped vegetables.



Step 2


Mix dressing ingredients all together then pour over the salad and toss through.
