Ingredients
2 cups salad greens
½ cup sliced grapes or strawberries
1 tin drained and rinsed butter beans
1 cup brown rice- cooked
½ cup mixed nuts and seeds
½ capsicum- diced
½ cucumber- diced
½ avocado
¼ cup cranberries
Sprinkle feta (optional)
Dressing:
4 Tbsp orange juice
1 Tbsp chia seeds
½ clove garlic
½ tsp ginger
1 tsp honey
Preparation
Step 1
Combine all salad ingredients in a bowl and toss until combined.
Step 2
Combine all dressing ingredients in a jar and shake together to combine.
Step 3
Pour dressing over salad and toss to combine.
