Power- up Summer Salad

About the Recipe

Ingredients

  • 2 cups salad greens

  • ½ cup sliced grapes or strawberries

  • 1 tin drained and rinsed butter beans

  • 1 cup brown rice- cooked

  • ½ cup mixed nuts and seeds

  • ½ capsicum- diced

  • ½ cucumber- diced

  • ½ avocado

  • ¼ cup cranberries

  • Sprinkle feta (optional)

Dressing:


  • 4 Tbsp orange juice

  • 1 Tbsp chia seeds

  • ½ clove garlic

  • ½ tsp ginger

  • 1 tsp honey


Preparation

Step 1


Combine all salad ingredients in a bowl and toss until combined.




Step 2


Combine all dressing ingredients in a jar and shake together to combine.




Step 3


Pour dressing over salad and toss to combine.
