Ingredients
2 large handfuls spinach/ kale
2 cup roast veg e.g. pumpkin/ kumara/ carrot/ potato
1 tin drained and rinsed butter beans
1/2 cup dried cranberries
1/2 cup seeds e.g. sunflower/ pumpkin
Dressing – mix it all together.
2 Tbsp orange juice
2 Tbsp lime juice
1 Tbsp chia seeds
½ clove garlic
½ tsp ginger
½ tsp honey
½ tsp allspice
Preparation
Step 1
Combine kale/ roast veg/ beans in a serving dish then sprinkle with cranberries/ seeds and nuts.
Step 2
Drizzle with dressing to serve.
Step 3
Sprinkle with feta (optional).
