About the Recipe


  • 1 bag frozen spinach

  • 1 Tbsp olive oil

  • 1x brown onion finely diced

  • 1 tsp garlic- crushed

  • 1 ½ x tubs cottage cheese

  • 1x block feta

  • ½ tsp nutmeg

  • 3x eggs

  • Pepper

  • 5 sheets filo pastry

  • Oil spray

  • 1 Tbsp pumpkin seeds (optional)


Step 1

Preheat oven to 180 degrees celcius

Step 2

Lightly grease a 22cm round / square baking dish

Step 3

Heat olive oil in frypan over medium heat. Add onion and garlic and saute’ until soft and lightly browned.

Step 4

In a medium bowl, mix together eggs, cottage cheese, feta and pepper. Stir in the spinach, parsley, onion and garlic.

Step 5

Spread spinach and cheese mixture into the dish

Step 6

One at a time- spray each sheet of filo, scrunch, and place on top of the pie. Top with pumpkin seeds if desired.

Step 7

Bake in a preheated oven for around 30 minutes, until filling is cooked and the pastry is golden and crisp.
