Stuffed crepes

About the Recipe

Ingredients

Crepes:


  • 6x eggs

  • 2 Tbsp psyllium husk

  • 4 Tbsp cream cheese


Filling:


  • ½ onion

  • 1 clove garlic

  • Handful frozen spinach

  • ½ cup grated cheese

  • ½ tub sour cream

  • ½ tup cream cheese

  • Shredded chicken (or cannellini beans)

Topping (optional):


  • ½ tin tomatoes

  • Handful grated cheese

Preparation

Step 1


Heat a frying pan and spray with oil spray.



Step 2


Combine all the crepe ingredients in a bowl and blend with stick blender.



Step 3


Add mixture to frying pan and leave for 1-2 minutes until mixture bubbles, then flip and brown the other side.



Step 4


Repeat until all of the crepe batter is used up.



Step 5


Add stuffing to middle of each crepe then roll up.



Step 6



Place into a baking dish and cover with ½ tin tomatoes and cheese (optional).



Step 7



Place in oven until warmed through (10-15mins).
