Thai peanut noodle salad

About the Recipe

Ingredients

  • 2 cups broccoli florets

  • 1 carrot- diced or cut into thin strips

  • 1 capsicum- sliced

  • 1 spring onion- diced

  • Handful sliced cabbage

  • 1 cup cooked vermicilli

  • ⅓ cup peanuts


Dressing:

  • ¼ cup lime juice

  • 3 tablespoons soy sauce

  • 3 teaspoons chili sauce

  • 1 clove garlic chopped very finely and crushed

  • 1 teaspoon sesame oil

Preparation

Step 1


Place the broccoli, carrot, capsicum and spring onion into a heated frying pan and stir fry until soft.



Step 2


Combine the remaining ingredients together in a large bowl and toss to mix everything together. Serve with crispy tofu.
