Chilli con carne meatballs

About the Recipe



  • 400g lean beef mince

  • 1 heaped tsp garam masala .

  • 3 jarred red peppers

  • 4 spring onions

  • 1 tsp smoked paprika

  • 1 x 400g tin tomatoes

  • 1x 400g tin tomato puree

  • 1 bunch coriander

  • 1x 400g tin kidney beans

  • 1 tsp cumin Natural yogurt to serve

Cous cous:

  • 2 cups cooked wholegrain cous cous or bulgar wheat

  • 1/2 lemon

  • Pinch cinnamon

Side salad: 2 handfuls of mesclun per person with 1tsp olive oil drizzled for dressing


Step 1

Cook cous cous or bulgar wheat to packet instructions. Once cooked, stir through juice of 1/2 lemon & rind + cinnamon.

Step 2

With clean hands, scrunch the mince with garam masala and a pinch of salt and pepper.

Step 3

Roll mince mixture into balls then place onto a frying pan with a splash of olive oil on medium heat

Step 4

Meanwhile- blitz the peppers, spring onions, paprika, cumin, passata, half the coriander, and a pinch of salt and pepper in a food processor or with a stick blender. Pour onto the meatballs in the frying pan.

Step 5

Rinse and drain the kidney beans then add these to the pan too. Toss all together until the meatballs are cooked through and sauce is heated.

Step 6

Serve the meatballs and sauce on cous cous or bulgar wheat with side salad. Garnish with yoghurt.
