Steak and kumara fries

About the Recipe

Ingredients:

  • 600g kumara or potato cut into wedges

  • 2 carrots cut into wedges

  • 1 Tbsp olive oil

  • 1 ¼ tsp paprika

  • Salt

  • Black pepper


For the steaks:

  • 2 tsp olive oil

  • 600g of lean beef or lamb steaks (trimmed of excess fat)


To serve:

  • 2 tsp olive oil 600g of lean beef or lamb steaks (trimmed of excess fat)


Optional: Chimichurri sauce In a food processor, combine together 1/4 cup chopped parsley, 4 large garlic cloves (or 2.5Tbsp minced), 3 Tbsp red wine vinegar, 2 Tbsp fresh (1 tsp dried) oregano, 2 tsp chili flakes, salt, and pepper to taste and 1/2 cup of olive oil. Pulse until everything is well combined and incorporated.

Preparation

Step 1


Preheat the oven to 200 degrees C. Line an oven tray with baking paper.


Step 2


Combine the kumara or potato and carrot with olive oil and smoked paprika on the prepared tray and toss until well covered.


Step 3


Season with extra salt and pepper then place into the oven to cook for 20-25 minutes or until golden and cooked through.


Step 4


Heat olive oil in a large frying pan over high heat. Add the steaks and cook for about 2 minutes on each side for medium-rare, or cooked to your liking. Set aside to rest for a few minutes.


Step 5


To serve, slice the steak on an angle and divide between plates with the wedges and salad greens and drizzle the chimichurri over the steak if using.
