Beetroot & Carrot Salad


During the two week wait one of the key things that we aim to do through nutrition is to increase blood flow to the uterus to support implantation. Beetroot is one food that's rich in nitrates, and could be beneficial for this! Adding beetroot into your diet in some way each day could be something to do in your two week wait. There are lots of variations and ways that you can do this, but here is one of my personal faves and an easy go-to option that I always opt for.

Ingredients

  • 1 large beetroot, raw, peeled, and grated

  • 2 medium carrots raw, peeled, and grated

  • 1 cup mint leaves (rinsed and roughly chopped)

  • 1/2 cup raisins

  • 1/4 cup sunflower seeds

  • 1/4 cup pumpkin seeds

  • 1/2 tsp salt

For the dressing:

  • 2 Tbsp Balsamic vinegar

  • ¼ cup Orange juice (freshly squeezed from 1 orange)

  • ¼ cup extra-virgin olive oil

  • 1 Tbsp Honey

Method

  1. To prepare the dressing: place all the dressing ingredients in a jar with a tight fitting lid. Shake well to combine.

  2. To prepare the salad: in a large serving bowl, combine the beetroot, carrot, mint, raisins, seeds and salt and mix.

  3. Pour over the dressing – toss again when ready to serve.
