Pregnancy-Friendly Crumbed Mushrooms

Looking for a unique entree idea since you're staying away from soft cheeses, deli-meats, and everything else a platter generally includes! This one is packed full of fibre to fill you up and tastes amazing! The crumb is super versatile so use it with chicken or other vegetables to mix it up.



Ingredients:


  • ¾ cup wholemeal breadcrumbs

  • 5 Tbsp parmesan cheese

  • ½ tsp paprika

  • ½ tsp salt

  • ½ tsp black pepper

  • 2 eggs

  • 2 tsp crushed garlic

  • 20 white button mushrooms

  • ½ cup flour

  • Cooking oil spray


Method:


  1. Preheat oven to 200 degrees celsius. Line an oven tray with baking paper and set aside

  2. In a shallow dish combine the breadcrumbs, parmesan, paprika, salt, and pepper

  3. In a separate bowl whisk the egg and garlic together

  4. Add flour to a shallow dish and season with salt and pepper

  5. Make sure mushrooms are completely dry then chop in half and coat in a light coating of flour

  6. Dip each floured mushroom into the egg mix, then fully coat in the breadcrumb mix and place on the baking sheet.

  7. Lightly spray with oil spray and bake for 12-16 minutes or until golden brown.

  8. Serve with sweet chilli and sour cream dip.
